Left on our own, we decided to not make a traditional Thanksgiving meal—perhaps because we'd missed celebrating Canadian Thanksgiving, or perhaps just to make something different. So, eggplant lasagne it was! First step, cut the eggplant and red peppers. Then, make the sauce.
After cooking the eggplant mixture, the lasagne is assembled.
A wonderful looking and great tasting result! The critters (L to R Tony, Spotless, Rudy, and Frogee) patiently await not just a taste of the lasagne, but a hefty slug of il vino roso.
